Ready to dig into foods and flavors that blur the line between fork and field and make you feel good about what you’re eating? Dig, a multi-city, multi-format restaurant group with a core focus on vegetable-forward cooking served from their portfolio of fast-casual restaurants will open a new location at the University of Pennsylvania in early 2022, announced Penn’s Division of Facilities & Real Estate Services. The new University City location, a 2,700 square foot space spanning two floors at 140 S. 36th Street, will be Dig’s second in Philadelphia, in addition to their Center City spot.

Founded in 2011, Dig features a vegetable-forward menu of mindfully-sourced food, prepared fresh and cooked by real chefs that the company trains. They work one-on-one with local farmers to develop rotating menus of seasonal offerings. Some of Dig’s seasonal offerings include Roasted Sweet Potatoes, Cashew Kale Caesar, and Cauliflower with Garlic and Parmesan, along with sustainably-sourced protein options such as Wild Alaskan Salmon and Herb Roasted Chicken.

Dig is strongly dedicated to sustainability, service, and social responsibility. At the end of each day, Dig’s restaurants also donate unsold food to organizations like St. John’s Methodist as a way to get food where it is most needed in its communities.

“Penn is committed to bringing a vibrant mix of shopping, dining, and services to the neighborhood and is always looking to refresh with new popular concepts around campus,” said Ed Datz, Penn’s Executive Director of Real Estate. “Dig possesses a strong commitment to sourcing food from local organic farms and has built a great deal of buzz everywhere they have opened a new location. We are thrilled that they have picked Penn and University City as their next venture.”

Respect the ingredients and the growers are words they work by, while they nurture the communities that support their existence. They are changing the food game and investing in the future. We are excited to welcome a second location of this mission-driven restaurant group later this year in our district.

About Dig
Dig is a multi-city, multi-format restaurant group with a core focus on vegetable-forward cooking served from their portfolio of fast-casual restaurants, annex programs, strategic partners, and their dining & innovation space, 232 Bleeker in New York City. Behind their food is responsible and thoughtful sourcing, much of which is grown in their upstate NY farm, DIG Acres, or sourced from their close network of regional farmers and partners. Founded by CEO Adam Eskin in 2011, DIG is on a mission to rebuild the food system not only through creating supply chain, operational, and environmental efficiencies but by changing overall consumer perception of vegetables from a daily necessity to a craveable meal.
